    Hmmmm

bread, milk, eggs, blueberries, sugar, maybe a sprinkle of cinnamon....

What specifically are you adding to yours that makes them *un*healthy???

Bread, egg wash, cinnamon, a pinch of sugar, fresh berries, pure maple syrup.
There's nothing bad happening there unless you are eating half the loaf yourself :)

The only room for improvement would be the type of bread you chose I guess? I love fresh bakery wheat bread because I'm a snob

Holy *kitten* whats all the cream cheese for?
You can omit the butter too and use coconut oil or walnut oil to grease the cooking surface.

You could cut back on the sugar. And yeah, what the poster above said...cream cheese?

This is really close to how I make French Toast:
    http://www.simplyrecipes.com/recipes/french_toast/

    Four Servings

    INGREDIENTS
    4 eggs
    2/3 cup milk
    2 teaspoons of cinnamon
8 thick slices of 2-day-old bread, better if slightly stale
    Butter
    Maple syrup

    Optional:
2 teaspoons freshly grated orange zest
    1/4 cup Triple Sec
    Fresh berries

    METHOD
1 Beat eggs, milk, and cinnamon together. If using, add orange zest and/or Triple Sec. Whisk until well blended. Pour into a shallow bowl.

2 Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture. Melt some butter (or use vegetable oil) over a large skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary.

3 Serve hot with butter, maple syrup, and if available, fresh berries.

    1 Scoop Vanilla Protien Powder
    2 Large Eggs
    1 Tbsp Water
    Pumpkin Pie Seasoning

Mix together, I like to use the turbo speed on my hand mixer because they end up a little thicker. Otherwise they are thin and crep like. I top with Walden Farms Calorie Free Pancake Syrup.

try this...enjoy, best of luck...think of Charlie Brown, the cartoon, not the dude who was just arrested.

    1) Use a whole grain bread
    2) Look for a lower fat cream cheese.
    3) Use six eggs and 10 egg whites (or the appropriate amount of a substitute, like egg beaters),
    4) Use a 1/2 cup of the maple syrup and no white sugar.

LMAO 10 servings but 12 slices? Wth.

Just use half the cream cheese, make it a low fat one, and use less sugar and less maple syrup. And yeah, whole grain bread, and substitute some of the eggs for some egg whites.

Also asking this. I think dropping the cream cheese would be an easy way to save calories, particularly when... wtf, cream cheese in French toast? Also, cutting it into cubes?

I think you're looking for a bread pudding makeover.

I would do that one and if you are really trying to cut back use a WW bread or low calorie thin slice multi-grain - just use egg whites for the wash and instead of a pinch of sugar a tsp of vanilla extract - but really the key is portion control so I would use a white bread maybe a slice of french or sour dough but that's me.

Sorry to find nutritional information it would have to be entered and I haven't made french toast since I started MFP so whatever you decide to use enter it in your recipe section and save it (nutritional values will depend on how many servings what bread you use, etc)

    That is:
    1. Pancakes not french toast
    2.pumpkin not blueberry
    3. Not sure its really pancakes either
    4. Walden free stuff is sadness in a bottle

I think the OP is actually asking for a revision of a STUFFED blueberry french toast casserole (this one in particular--which I've actually made):
    http://allrecipes.com/recipe/overnight-blueberry-french-toast/

Hence, the cream cheese and cubed bread.

It does sound delicious and hey why not just make it for sunday brunch? have a side of bacon or sausage and that's one big meal for the price of two
