My daughter uses them to make her MOST DELICIOUS chicken salad...

    1C cooked chicken
    1/2 onion, chopped
    1 stalk of celery, chopped
1 apple, chopped (she leaves the peel on)
    1 avocado, mashed

Mix it all together and enjoy in a 50 calorie Joseph's flaxseed pita. Mmmmmmm!

Bonus: This is enough to feed my family of 4!

I routinely mix an avocado with a can of tuna. Treat the tuna bit w lime juice, then add some balsamic and season the whole thing (I add salt, pepper, mustard). I use it as a dip for bread. The yield is big enough to be a meal.

You can use them in baking pretty easily as a sub for butter. I hear about chocolate avocado cupcakes. Looking for some recipes right now myself...

I just chop, add a dash of Balsamic vinegar and a quick grind of fresh black pepper.

    Yum!

I buy them pre-mashed in a tube, but you could mash them up with some lemon juice (so that it doesn't go brown), some pepper (for an extra kick, I like spiciness - the tube I buy has chilli flakes) and use that instead of butter on toast and in sammiches. Avocado spread thinly on toast, then dipped in soft-boiled egg... Mm....

I love to spread avacado on a turkey and ham sandwhich!! Soo good. I love it with a pinch,of salt, or plain if rip. Avacdo blending with banana and some water or milk if you want, is SOO good. Not at all what youd expect

I love advocados and I could eat them with everything... problem is they tend to be bit expensive.

I love advocado in my sushi
or just plain with salt or in my chicken breast sandwich with some chili sauce :D

Oh She Glows has a creamy avacado pasta sauce I've made in the past. It is really tasty and a great way to use up avacados before they go bad. I find the sauce keeps for a few days after it's made too, since there is citrus in it I guess, but it doesn't go all brown and icky looking. Great on whole wheat pasta and on spaghetti sqaush. I like to throw some pine nuts and cherry tomatoes in there for color and texture. http://ohsheglows.com/2011/01/31/15-minute-creamy-avocado-pasta/
