This blogger makes comfort food healthy (and they are all really easy too). I try recipes from tons of healthy blogs all the time and most I would never make again. Literally everything I've made from this blogger has been delicious and satisfying. Your man will love this Sloppy Joe Casserole and I promise you don't even need to tell him it's healthy. He won't know. Especially if you use a food processor on those veggies...it just looks and tastes meaty and delicous.

My 6', 175 lbs husband will pretty much eat anything, so his approval is anything that will fill up his plate. But I do have to make a lot of food to feed my big man and we're not exactly rolling in cash. One of the best purchases that I've made within the last few months (and probably all of last year) was Ten Dollar Dinners my Melissa d'Arabian. She has great recipe everyone (even some of my family's young picky eaters) love, with lots of money saving tips. I've seen money saving tips and ways to stretch your food before, but this was so complete on top of yummy that it has pretty much become one of the only references I have when it comes to recipes. I loved the show when it was on, so when she came out with a book, I was there! It can be hard to fill up a big guy with healthy cheap stuff, so that book has been great. I have a whole new appreciation for root vegetables now! I like to combine those recipes with a lot of the lighter ingredients that I find on skinnytaste (I do that with the foodwishes recipes too). And speaking of, those are amazing recipe sites.
Edit: Oh and my man is a meat and potatoes guy too. But as long as I'm creative with the way I make veggies, he's much more adventurous. He tried artichokes the other day! And he goes crazy for zucchini ravioli and eggplant parm now.0 -
I'm glad everyone is being nice to you, I posted a topic about snacks that my husband would enjoy and everyone had a field day talking about how good isn't gender specific etc when they know very well what I meant. We cut chicken in half long ways and pound them out, and then put pesto or basil leaves on it with sliced tomatoes and then roll it up and bake. Makes chicken less boring. We also do a good amount of crock pot meals especially in the winter. You can never go wrong with a tri-tip. You just season it and throw it in the rotisserie or oven. My husband doesn't really like veggies either, but he really loves the Green Giant brand Brussels sprouts in the frozen section. I like to make pulled pork in the crockpot. really easy and makes lots of food and great for leftovers. We also slice up tomatoes and cucumbers and drizzle with olive oil and balsamic vinegar and salt & pepper for a snack. Really yummy and fresh.0

Ha, my husband is lurking around here somewhere and he will tell you, he tried to be picky but then realized he didn't actually know what a lot of food actually tasted like.
Unless somebody is diagnosed with some kind of aversion, I have very little sympathy for picky eating. I try to be nice and ask my husband for things he wants to eat when I grocery shop, but if I'd bought into the idea he didn't like all the things he said he didn't like when we started living together, we'd eat the same 3 things all the time.0 -

Try the Skinny Cheesy Chicken, Broccoli, and Rice Casserole from Iowa Girl Eats. It is super filling and my husband did not even notice when I switched from my old recipe to this one.
Her husband is pretty close, if not, underweight and you're suggesting this?
OP, saute or roast the veggies he does like with olive oil, coconut oil, etc.
And you can have a smaller portion of it.
Just give him a double/triple/etc portion of whatever you're having

My thoughts on this is that you don't necessarily have to change the recipes that you currently use and that your husband enjoys, you too can eat them but in smaller portions and add a lower calorie side to keep yourself satisfied. I found once I entered recipes in my recipes section that they weren't all that bad.
If you want to rework your own recipes to make them a bit healthier thats good and good for both of you.
Cook what you want - eat sensibly - if he wants more he can have it.0 -

You are so welcome. I LOOOVED it. We went out to dinner the night after I made it and I was sad because I really really wanted to eat those leftoevers. Lol. Try those Emily bites recipes...it's not "high-brow", just delicious. If he wants to eat two portions, that's probably fine and you will likely be happy with one and maybe a salad or side of steamed veg. The Chicken Parm Casserole of hers got rave reviews at my house as well.0 -
On a serious note, just wanted to add/say that last I checked, guys were humans and humans tend to eat food. So in other words, likes and dislikes cannot be distinguished based on gender or marital status.0

I have been slowly making changes to the meals we already eat and eating smaller portions and more veggies. I did just tell my junk food loving husband yesterday, either you support me and help think of meals I can make that you would like or you can make your own dinner. Truth is I am not making anything gross or weird. Lots of white meat and veggies. I still make some of their favorites. When it comes down to it my health is more important than his taste buds. I have rarely been happier than I am now. Finally losing weight and feeling great. My kids are going to be healthier too. There is no way I am turning back now for anyone.0
