The Cauli-sagna
Just thought I'd share this meal which I enjoy on a regular basis.
Using your favorite spaghetti sauce, simply substitute pasta for cauliflower. Careful not to overcook the cauliflower, al dente should do, we use a single serve alminum tray, put the cauliflower, add the sauce and sprinkle with Cheddar or Mozzarella cheese. Then put in the oven in until the cheese is melted.
It's delicious as the cauliflower acquires the taste of the sauce very well and all the calories saved by not using pasta is amazing! Watch out for the cheese though, easy does it. You will also use less sauce because it takes less to cover caulilower as it does covering pasta. It's a must try for sure.

Although, tbh, I'd call this recipe a cauliflower casserole, 'cause lasagna is named for the pasta, soooo...

When I make lasagna, I make it in a 9X13 pan and get eight large slices out of a batch. I use six oven-ready Barilla Lasagna pasta sheets per recipe. There is a total of 400 calories of pasta per recipe... which works out to 50 calories of pasta in a large slice of lasagna.That's just over 9 grams of carbs per serving.
The total caloric difference between cauliflower lasagna and pasta lasagna is only about 40 calories (I'm guessing 10 calories of cauliflower per slice?)
Personally, I don't have a problem with eating cauliflower as cauliflower, but in lasagna, the calorie/carb savings just don't seem worth it. I'd much rather have the extra 40 calories and enjoy the real pasta!0 -

If your mom has trouble with wheat/gluten, there are many GREAT wheat-free/gluten-free pastas on the market. My father has celiac disease and is also a serious pasta lover. He has not had to give up eating pasta because he can't have wheat.0 -

I'm glad you guys like the idea! We use a meat sauce, but this meal can be tweaked in so many ways. It's one of my favorites and I don't even think aboout using pasta anymore. That calorie-dense white stuff doesn't even taste anything anyway!0

Made frozen ravioli tonight using classico brand sausage and peppers sauce and added a 6oz can of V8 low sodium to stretch the sauce. Could be a great add on for this or other recipes.0
