I bought a eggplant and I do not know how to fix it help.

    (Stop 'n' Shop) 8oz Canned Tomato Sauce - Tomato Sauce, 1 container (9/10 cup ea.)70 18 0 0 7 0
    Kroger - Low Moisture Part Skim Mozzarella Cheese - Shredded, 1/2 cup 160 2 10 16 0 30
    Bobs Red Mill - Natural Raw Wheat Germ, 2 tbsp (11g) 45 5 1 3 2 0
    Pam - Canola Oil - Non-Stick Cooking Spray, 5/8 tsp (1/2 second spray) - .5 grams 20 0 3 0 0 0

    Total: 405 51 15 24 20 30
    Per Serving: 203 26 8 12 10 15
    Peel eggplant and slice thin. Dip both sides in wheat germ. Bake at 450F, on a sprayed cookie sheet, for 10 minutes, flip and bake another 5 minutes. Lower oven to 350F. Spray an 8x8 inch square pan with Pam. Layer sauce, eggplant and cheese, ending with cheese. I like to add garlic powder and Italian seasoning to the sauce, for flavor. Enjoy!
