What are everyone's favorite vegetables?

Options
I find that I've been eating the same veggies continuously and I'm ready to try some new ones to mix it up. The past week, I've been not getting as many vegetables a day as I need and I do not want to make a habit of that. Thanks, everyone!!! :)

    I love veggies! The ones I can think of at the top of my head are arugula, Chinese veggies, mushrooms, broccoli, Brussels sprouts, cucumbers, peppers, and corn.

    On their own, leeks are excellent. Just chopped up and thrown in a stir fry is good, but we like to cut them in half length-wise and just cook them in the oven with olive oil and a little salt and pepper. They are really good.

    Also, I find stir frys are a great way to get a lot of vegetables. I like to throw a little bit of everything in there.

    Avocados are also amazing. Using guacamole (I also add chopped tomatoes, onion, and garlic) as a condiment is great as well.


    Edit: There are also great root vegetables out there. One I've recently started eating more of is parnsips. I take it to a cheese grater and make hashbrowns out of them. Add some onion, oil, salt and pepper, and it's delicious.

    Jicama is amazing in a fresh salad with mangoes.
    It is so crunchy and very light flavor~ yum

    I love cauliflower! I like to steam it and chop it up small, makes a great rice substitute.

    Spaghetti squash! So sweet :) tastes great with a bit of marinara and served over spinach~

    Zucchini too. I love to make zucchini boats with taco/nacho style fillings.

    Red cabbage is a new favorite. The color makes it just that much more appealing!
    I use it on sandwiches/burgers instead of iceberg. Shred and mix with carrots and soy sauce for asian slaw.

    If I could afford it, my family would easily have me spending $100/mo on black olives exclusively.

    Edit: Apparently Olive is technically a fruit, so our new favorite veggie is onions, carrots, lettuce and tomatoes.

    I've been loving roasted cauliflower lately. Great tossed with pesto. I also eats tons of green peppers when I need something crunchy.

    I will take ANY veggie and chop it up and put it on a "flat bread" pizza. Use a flat out bread, put 1 tbsp. olive oil on it, Italian seasoning and then put as many veggies on it as possible, top with fat free or 2% or skim milk cheese and you have a healthy "pizza" :)
