Got Hummus?

Hey!

Do any of you have a recipe for Pepita Hummus? I have searched and I can not come up with anything. Maybe I am missing something....

Also if anyone has any great recipes for garlic or spicey hummus' please let me know! Thanks!

    Allrecipes.com is a pretty good site and they have a healthy section with lots of hummus recipes.

    I like that site because it has reader feedback from those that have fixed the recipes and it has a feature that allows you to adjust the recipe for one person or 20 and it provides nutritional info.

  • BTW Pepitas are the inside of the pumpkin seed... obviously without the shell. Just incase anyone was wondering!

    1.5cups pumpkin seeds (raw)
    1/2tsp salt
    1/4tsp cayenne pepper
    1tsp ground coriander
    3tbsp tomato paste
    Juice of 1 lime
    About 3/4 cup water

    Take the pumpkin seeds and place them in a skillet and dry roast until they start to brown slightly and pop like popcorn. Remove from heat and allow to cool. Once cool, place in a food processor and process until a fine powder. Add the remaining ingredients and process until smooth. Will be slightly thick, but if you want it thinner just add more water.
