Vegetarian Substitutes?

Options
So I've been a pescetarian for about eight months now and I feel great. But sometimes I miss the taste of the foods that I used to eat. Does anybody have any veggie recipes for these dishes?
~Tacos
~Nonmeat meatloaf
~Homemade veggie burgers

    Soyrizo is yummy and to me, a very good substitute for the real thing. I also make pescetarian patties with quinoa, fish (whatever I might have on hand), eggs, some breadcrumbs, and whatever veggies and spices I'm feeling that day. pretty much all blended up until you have a good consistency to make patties. Last time, I added roasted jalapenos and onions which gave it a good smokey flavor :).

    Bumping for others' ideas. I don't really care to buy a bunch of pre-made meatless products. I much prefer whole recipes, mostly because you can toy with it for different flavors and make it different every time :)

    Heads up that they all also freeze well! I make them in big batches and freeze for quick lunches, dinners, etc.

    You can use these for meat substitutes in almost every dish =) I have been a vegetarian for 13 years and found that you just have to get creative, a lot of trial and error to see what flavors you like.

    Theveganstoner.blogspot.com has a recipe for a DELICIOUS lentil loaf. You can modify it however you want and it's superb easy! I even tricked my husband into thinking it was meat! I make it all the time! Just search "lentil loaf" on their website.

    Lentils are a GREAT sub for ground meat sort of dishes! I think lentil tacos are great (made some last night) and very simple -- you can even cut down time by adding a taco seasoning packet and some salsa for the flavoured "sauce" instead of making your own. Just add your seasonings (I tend to add a bit of ketchup or tomato paste too for a bit of sweetness) to cooked brown lentils and these will be just fine in a tortilla or taco shell with fixins. :)

    Also, lentil loaf and veggie burgers have a TON of recipes floating around the interweb, it's definitely a good idea to play around with those and see if you find one you like.
    BUT here's mine: I like a simple veggie burger (reminiscent of those chicken burgers from fast food places?) made of cooked rice (brown or white works) and chickpeas (roughly equal amount as the rice), an egg, some salt, and enough breadcrumbs to bind it all together. Pop all the things except breadcrumbs in a food processor, then dump the "paste" into a little bowl and work the breadcrumbs in with a spoon. Shape into little burgers. Pan fry the patties in a little oil until golden on both sides, serve with whatever you like on a nice soft bun. :happy: cheers!
