What are some vegan foods that I can mix with oil?

I'm looking for vegan foods that can be either mixed with a bunch of oil and taste decent or has a lot of fat. For example mashed cauliflower I can mix with bunch of oil and some other spices and it tastes good. :)

I just wanna meet my calorie requirements and the easiest way how to do it is by adding oil to everything lol. I ate a lot of nuts and avocados, etc but these stings has some carbs too so I can't ate them too much, I have a carb limit. While pure oil does not have any carbs so I just mix it with foods. Usually I just pour it over my veggie salad but that starts to become boring. Give me some recipes please, maybe a souse of something, with something, something fatty, something, something... for anything fatty that is vegan... and low carb. :/

    Let me get back to you! I'm a vegetarian keto/paleo hybrid, but I eat a lot of dairy fat to hit my fat goals. Lemme think on it and I'll post something. I understand how hard it is to hit fat and protein goals when you're going low carb.

    Are you on a ketogenic diet? Maybe a vegan-paleo combo? Are you trying to lose weight by restricting carbs or gain it? What percentage of your calories is coming from fat? My recommendation if you want lots of quality calories is to drink protein shakes with peanut butter or almond butter mixed in. Too much fat is not good, most people should be around 30% calories coming from fat or lower. Protein, though, if you are limiting your carbs is easy to drink. Trader Joe's vanilla soy protein is very cheap, 2 scoops = 25g protein, add 1 or 2 packets of splenda, as much almond butter, oil, peanut butter as you want, water, use a shaker bottle, tastes great. It is much easier to drink calories then to eat them. I use flax seed oil to get my omega 3 fatty acids (can to fish oil since I am vegan) but it tastes nasty in a shake. I solve that by adding a teaspoon of cinnamon (doesn't blend that well in a shaker bottle but who cares) and like magic you can taste the flax oil :) Vegan bodybuilders often blend lots of fruit, bananas, rice/hemp/soy protein, etc into shakes to get down 500 cal at a time with not much problem. To eat all that more or less dry would be a chore.

    Yes I'm on ketogenic vegan-ish diet. I ate eggs tho and I sometimes ate some low fat cheese. No any kinds of meat tho. And I don't want to get most of my fat from dairy cos I wanna stay below 30 grams of saturated fat a day cos of health reasons. Majority of my calories comes from fat, I would say 75% or something. And I menage to stay below 30g of sat fat a day cos I mostly get my fat from "good" fat sources like oils, nuts and fruits not butter, meat or dairy.
    Drinking my food sounds like a great idea! I tried it today, blended some stuff together and I definitely feel way better than I would eating it. Thanks for suggestion! I will keep doing it!

    I would imagine any vegetable. If you are mashing up cauliflower and doing that, then why not any other veggie (i.e. carrots, peas, sprouts, etc)?

    And there are vegan friendly pastas if you want to take a look into that. maybe make/use a pesto for those?

    Do a stir fry with different vegetables (green ones mostly, but I love carrots and such as well), and toasted sesame oil or safflower oil! So you get veggies in, but you still have the ability to add the amount of oil that you want.
