Pumpkin Custard-- Just like Pumpkin Pie!

This is what I make for Pumpkin Pie at our house, and with recipe making 16 servings, a serving is only about 120 calories! it's so healthy and fullof protein and fiber, you can eat it for breakfast or dinner, instead of just desert.
1 can of pumpkin
3 eggs
3/4 can either evaporated milk or unsweetened coconut milk
2 tbsp honey
nutmeg, cinnamon, vanilla, etc to taste
Topping:
1/2 cup old-fashioned oats
2 tbsp light margarine or butter
1/4 cup chopped pecans or walnuts
1/4 cup unsweetened shredded coconut
2 tbsp honey
spices to taste
Mix all pof the custard ingredients; pour into baking pans (I use to 9-inch pie pans, but you could use a casserole dish, etc). Pour oats evenly over the top of each custard. Mix other topping ingredients; sprinkle over oats. bake at 350 degrees for half an hour to 40 minutes.
Be creative in the spices you use! I use curry, tumeric, ginger, etc with the coconut to give it an Indian flavor, or you could go the more traditional route with Pumpkin Pie Spice. And you can substitute for butter and milk to reduce the calories or whatever you want.

Mmm...sounds yummy! And I lvoe the fact your recipe doesn't contain artificial sweeteners. I've gotten all excited before when a post came up for a "healthier" version of a dessert, and then been disappointed when I realised it contains splenda or some other chemical!0
