Need advice on cooking time for homemade flapjack

Hi all,

The subject sounds simple, and yet I find myself unable to get the end product how I want it.

Homemade protein flapjack, here's the recipe I've put together for myself...

200gr Oats
8 scoops of whey
2 tbsp honey
1 tbsp golden syrup
1 tbsp peanut butter
200ml full fat milk
50gr dark chocolate
50gr coco powder
75gr raisins
2 banana's

I've tried 3-4 different cooking times and temps and I can't get the consistency I want.

The temp I'm cooking with (fan assisted electric oven) is between 140 and 190, and times have varied from 10 minutes to 20 minutes, but everything comes out too dry or too gooey.

Am I missing something here? Are the ingredients just not mixable? or am I way off with the cooking temp/time.

I've tried not baking it, and leaving it in the fridge for 30 mins, which is great when you first take it out, but once it's in a pot and warms up at work (i have them as snacks) it just goes all gooey.

It's getting a little frustrating trying different things, not to mention a little expensive lol.

Any advice anyone can offer would be very much appreciated.

Oh and for anyone interest here is the MFP breakdown of what's in it... calories, protein, fat, carbs ... and I normally get 8 squares out of it.

    I'd say you are missing some baking powder in there to help it rise up. Try perhaps a tsp or 2, not very sure on the exact measurements, but it may help.

    From the ingredients it looks like the mixture might be too wet? Flapjack mixture is normally quite solid and has to be pressed down into the tin before baking, it shouldn't be runny - maybe try using much less milk, or removing it entirely? here's a fairly classic recipe for flapjack which might help - it cooks at 140 degrees c for 40 mins: http://www.bbc.co.uk/food/recipes/flapjacks_86993
