and even if these arent for you, or you find the calories too high...think of this....your friends, family, kids, husband etc that dont eat healthy...now can get a tad bit healthier in a treat! and it is a lot less calories when you dont use egg or oil! Hungry Girl’s Yum-Yum Brownies
1 18.25-ounce box devil's food cake mix
1 15-ounce can pure pumpkin
Preheat oven to 400 degrees.
Mix the two ingredients together. Don’t add anything else that may be mentioned on the box, such as eggs, oil, or water.
The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do NOT do this!
Place batter into a 12-cup muffin pan lined with baking cups or sprayed with nonstick spray. Place pan in the oven, and bake for 20 minutes. Enjoy!
Yield: 12 muffins
Nutritional Info: 181 calories, 3.5g fat, 357mg sodium, 37g carbs, 2g fiber, 20g sugars, 2g protein

There's a really yummy version that doesn't use brownie mix, for those who are fans of splenda. These are South Beach Phase 1 friendly, which is why I came across the recipe (got sick of ricotta mixed with lemon juice and cinnamon as a dessert!) I've been off South Beach for ages now, but my fiance still requests these! Recipe is from 3fatchicks.com
1 15oz. can of black beans(plain) drained and rinsed
4 medium eggs
1 1/4 cup Splenda
3 1/2 tbsp. unsweetened cocoa powder
1 tsp. baking powder
2 tbsp. canola oil
1 tbs real vanilla
1/2 tsp baking soda
1/4 cup ricotta cheese
1/2 cup walnuts crunched in hands0
