Sounds great!!! We've been experimenting with different curry recipes, and I can't wait to try this one!! I may use part chicken and part chickpea for a nice contrast. Thank you so much!!

Greek yogurt didn't add bitterness IMO! Also, I used crushed tomatoes instead of sauce. It was great!

    Another option:
You can soak raw unsalted cashews (about 15) in little warm water and grind it into a fine paste and add that instead of yogurt. Gives a creamy feel to the dish that is similar to what they have in restaurants.

This works really well, plus make sure you use a yogourt with a little fat in it like 2 - 2.5% or it will curdle when you add it. Take the amount you need in a bowl and add a bit of the heated sauce to the bowl, mix to warm, then add to the main recipe - helps prevent separation of the yogourt.

I have a HUGE spice box & love cooking Asian from scratch.

I made this yesterday and loved it. I had the leftovers for lunch today. Very flavorful and filling! I used Greek fat free yogurt and it was still amazingly good.
