Cauliflower recipes?

I'm looking for new ideas for veggies, cauliflower in particular! Right now I just roast it with garlic and lemon juice.. I've seen recipes for cauliflower crusts, fritters, etc.. what are some of your ideas?

    This might sound a little weird, but I really dig "cauliflower rice." It doesn't taste exactly like rice, but it's really good! Just google cauliflower rice and a bunch of recipes will pop up.

    I have made cauliflower crust pizza before as well and it turned out quite nice - here is the link for that as well.

    I've done the cauliflower rice, mash and pizza base. All three are great. Lots of cauliflower rice varieties ; I found a coconut lime cilantro one which is great with thai curries. Google is a great recipe book!:smile:

    Just roasted with olive oil is delicious... you can sprinkle a bit of cheese in the last 10 minutes too.

    My favorite and easiest is just mashed cauliflower. Boil one cauliflower until it's very tender, add 3-4 tbsp of cream cheese (45-60g, depending on the size of the cauliflower), salt and pepper, and mash.

    When I need a healthy lunch on the go, I cook cauliflower with veggies and philadelphia cheese. It tastes really nice! :) Or make a cauliflower soup, filling and warm!

    No recipe but we had Mock Mashed Potatoes this week for the first time. We cut up a head of cauliflower, boiled until done. Drained, then added a few Tbsps of Light cream cheese & light margarine, salt & pepper, splash of milk. It was good. I see various recipes online that add Parmesan cheese or garlic as well. The second time we made this we also boiled a big diced potato along with it to help with texture. I topped mine with a few Tbsp of low calorie/low carb gravy & I could easily eat that a lot & I usually don't like cauliflower very well.

    Yeah my wife used to smash them up like mashed potatoes. I don't know what she put in it but was awesome. Going to get her to start doing that again.

    The recipe calls for broccoli, but I sometimes substitute brussel sprouts, and I sometimes substitute cauliflower.

    I eat cauliflower several times a week (usually) so I'm so glad to see this post! I'm hoping I can get some new cauliflower ideas.

    Cauliflower Rice - I make a lot of Indian food and I do not notice much of a difference if it is with a dish that has a gravy or sauce, like Chicken Tikka, Curries, etc. 30 calories a cup really beats the 200 calories in brown rice! I have come across a lot of recipes for different flavored cauliflower rices to eat as sides, but I have yet to try any of them. They look good though!

    Cauliflower Mash - It's similar to mashed potatoes but you can use 100% cauliflower or, my preference is to add a little bit of boiled potatoes plus the cauliflower. Then I add garlic, light sour cream, and Parmesan cheese. The calorie count is amazing compared to traditional mashed potatoes.

    Cauliflower Pizza Crust - This was actually really yummy! But I have a kitchen aid so I have to admit, when I make pizza I rather make the traditional dough (with yeast and flour) and just roll it out real thin. The cauliflower pizza crust was a little extra work than I wanted because you have to squeeze out the water from the cauliflower.

    Parmesan Roasted Cauliflower - This is a DELICIOUS snack. My husband and I both love it. If I ever have an extra head of cauliflower this is what I make with it. Here is the recipe. I use a little less of the oil than the recipe says.

    BEST recipe ever. my family eats cauliflower fried rice at least once a week and we fight over left overs. We make it with peppered bacon, a couple eggs, and green onion.

    I use cauliflower in almost any dish that requires rice (broccoli cheese casserole, shrimp jambalaya, fried rice). I've also used it as a substitute for potatoes (mashed potatoes, shepherds pie, potato salad). You can find tons of recipes for these and others on Pinterest.
