I had this trouble a lot when I lived on my own. I bought a bunch of Tupperware containers and would immediately serve out portions when I made something that had 4-6 servings and stick them into the fridge/freezer.
A lot of recipes can be halved or quartered. Get some largeish ramekins and they can be used for tiny casseroles. Recipes that call for items like 1 egg can be gotten around by using egg beaters as an egg substitute. Use a smaller pan for smaller servings.
Other than that, I used to make a lot of sandwiches and salad because they were easy and self contained portions.0
