  • Yes jackeh, your mom is right about the peach skin...in most every fruit there is a huge wealth of nutritional value in that in-between area not to mention the benefits of the additional fiber it adds to your daily intake.

Now that I've praised your mom  I'm not sure what I'm having for lunch, more than likely it will be a Lean Cuisine that I've stocked up on from a recent sale. I find that they are a great no brainer when I haven't been shopping. They help keep the calories under control

I actually broke down and bought some of the Morning Star Ckn patties. Put it on an english muffin with FF Ranch dressing and Franks Hot Sauce + some lettuce and tomato! Yummy! Thanks Tami! You posted last week about how good these things are! Once again *bow* to you for the great tip!

I'm eating it right now. It is so yummy! Portobello mushroom pizza. It's an atkins recipe I found.

1 Portobello mushroom (about 3 ounces, stem removed, wiped clean with a damp paper towel.
Garlic oil spray ( just used regular olive oil with a sprinkle of garlic powder)
1 Tbls low-carb tomato sauce ( I just used homemade sauce from last night)
    2 Tbls shredded mozzarella cheese

Heat oven to 425 Spray both sides with garlic oil and place on an aluminum foil-lined baking sheet. Bake 30 minutes, or until fork tender, turning once halfway through cooking time.
    Increase heat to broil.--

Top concave side of mushroom with tomato sauce and cheese. Place under broiler for 1 minute or until cheese melts and bubbles.

This really is good, my husband even liked it and he does not like mushrooms. I added a tiny little bit of Italian sausage. It upped the calories just a little bit definitely worth it!
