Poached salmon fillet, ratatouille filled mushrooms, stringless fine beans and maybe a veggie burger, depending on my weigh in tonight.0

Spaghetti with green beans. No dessert.. later on I may make a "2nd supper" and have some frozen fries.

shrimp, mushrooms, cilantro & garlic sauteed in coconut oil, served with a 1/2 cup alfredo sauce on top of a bed of spiral cut zucchini "noodles" (zoodles). Top that off with a bit of fresh grated parmesan. DELICIOUS and less than 400 calories!!0

Salmon. It was on sale yesterday and I could resist buying 700g;s, so it's salmon again tonight. Yesterday I crispy fried the skin and roasted, tonight it's getting poached and put in a nicoise salad.0

I love salmon...have it practically every evening as part of dinner.0 -
Yeah, we can't get enough salmon either and it's versatile and can morph into just about every style and type of cooking imaginable ........mind you the local pickerel is outstanding when in season.Salmon. Salmon is the best....I try to eat it at least 1-2 times a week. So good!0
