Grill/ camping food?

I love to go camping in my camper with all the campers! It just seems like the same old same old as far as camping food.Looking for new ideals that are kind of healthy?

    Many root vegetables are great on the grill, and since they don't need refrigeration, they are perfect for camping. Sweet potatoes, white potatoes, carrots, parsnips, turnips, etc.

    Many other vegetables and fruit are also good grilled but have a shorter shelf life at room temperature - squashes, mushrooms, asparagus, green beans, cauliflower, brussel sprouts

    Make a foil packet of chopped assorted of veggies, add a little oil and spices and cook on a grill or open fire.

    Lean meats or fish are great on the grill.

    If you are in a camper - cook anything you would at home, except maybe a pot roast or roast chicken/turkey. What's the big deal - it's not like you're backpacking and a week away from civilization.

    Unless you are doing legit camping (backwoods, only have what you carry in) then no point eating any different then you do at home.

    I can make anything over a campfire or with my car camping BBQ that I can make at home. That includes muffins and cookies.

    Camping does not have to entail only hotdogs and chips. But should include them, and smores!

    I too can cook almost anything when camping I do at home. We island camp at our favorite lake and I have a grill I put over a fire (I'll grill or use my pots and pans on it) and we use a coleman stove when it's too hot to cook over the open fire. We will do a lot of "hobo" meals where we put whatever we want in foil (chicken, onions, thinly sliced potatoes & seasoning is my favorite) and cook directly in the fire.

    Our problem is we use camping as an excuse to buy and eat junk!
