Spicy Citrus Tilapia (adapted from Taste of Home)

4 six-ounce tilapia fillets
1/2 teaspoon paprika (or smoked paprika)


Marinade:

1 orange, juiced
1 lime, juiced
1 tablespoon brown sugar
1 tablespoon olive oil
1/4 teaspoon red chili flakes
1/2 teaspoon ground cumin
2 tablespoons soy sauce (low sodium)
2 peeled, crushed garlic cloves


Preparation:

Wash, then dry the fish with paper towels.

in a large glass pan (or a plastic zipper lock bag), put the fish. Mix the marinade ingredients and add them to the fish. Marinate the fish for 15 to 20 minutes. No longer. Meantime, cover a baking sheet with foil and spray with nonstick spray. Preheat the broiler.

Remove the fish from the marinade. Drain the marinade into a small saucepan. Place the fish on the baking sheet and sprinkle with paprika and a couple of grinds of fresh pepper. Broil the fish for 15 minutes or until it is firm to the touch, not squishy.

Meanwhile, bring the marinade to a boil, then turn heat to medium and reduce the sauce until it's slightly thickened.

When the fish is done, pour the thickened marinade over.

I have made this twice and it was delicious each time. I served it with plain white rice.
