Im looking for suggestions to increasing my veggie intake. Are there good juices out there maybe (not full of other junk)? I really dont like V8!
I have been trying to eat more veggies but honestly i feel sick trying! I find I am just not eating now because I would rather be hungry than eat veggies.
Honestly how can a person dislike them so much! What is my problem!!?!

Many veggies are delicious when roasted in the oven (or outdoor grill) with olive oil, salt and pepper (brussel sprouts, cauliflower, okra, broccoli, sweet potatoes, turnips, carrots, mushrooms, peppers, onion.....). Steaming is another great tool for veggies (with a little spray butter and salt after). If you don't have time to cook, try raw veggies with yummy dips to add flavor (red pepper hummus is one of my favs!). Also, load up sandwiches with veggies like avocado, spinach, cucumber. good luck.0

Mashed Cauliflower is sooooo much better than mashed potatoes. I am a big fan of cooked spinach too......if you cook it you can easily consume cups of that stuff and it seems like such a small portion cooked!0

What don't you like about them? If it's how bland they are, try them seasoned with hot sauce, Italian herbs and spices, cream-based dip. If it's the mushiness, try them raw. If it's the crunch, try them roasted. If it's the texture, try them pureed in a soup.0 -
Mashed Cauliflower is sooooo much better than mashed potatoes. I am a big fan of cooked spinach too......if you cook it you can easily consume cups of that stuff and it seems like such a small portion cooked!
You cannot compare mashed cauliflower and mashed potatoes. They are each delicious in their own right.0 -
Sunday afternoons we chop up veggies and fruits, and put them in quart baggies.
Each morning into the blender-
2 cups of Aloe water, the bag of fruit and veggies, a splash of plain yogurt, flax & chia seed, 2 lil splenda packets, a dash of joint juice, and blend! Gulp gulp gulp - veggies/fruits for the day = 5-7 servings.
careful on the fruits, melon makes something weird happen. Stick with berries and bananas for making the veggies taste like heaven
for me the challenge with getting enough veggies was always the required chewing0 -

I use to hate ALL veggies but many years ago decided to train myself to like them. I thought if I eventually acquired a taste for coffee, wine and other things, why not veggies?
I decided to start slow with a couple veggies (the ones I tolerated the most), in small doses mixed into what I liked to eat. I think I started with stir-frying tomatoes and red peppers and adding them into my pasta.
Now I'm a vegan so I guess it worked lol.0 -

Obviously I don't know you and I have not looked at your diary as such, but a lot of people were raised on a simple diet of 3 veggies and meat hence the cliche that you often see portrayed in movies where the parent(s) say something along the lines of "You don't get any dessert till you finish your veggies"
Take a risk and expand your palate by exploring new ways to prepare vegetables...you may be pleasantly surprised.0 -

I totally get where you're coming from. With most veggies, I would rather eat mud than them. What I found that works is I make smoothies that combine vegetables and fruit and I don't taste the vegetables. For lunch today I had 1 cup of spinach, 6 oz. of carrots, 2 bananas, 2 cups of strawberries and water to cover 2/3 of it in the blender. I only taste the strawberries.0 -
I hated veggies, until I started sautéing, with extra virgin olive oil, and mixing them with organic almonds, or walnuts. Things that were formerly eww, like broccoli suddenly taste incredibly good - esp if there is an onion in the pan.
And- work out harder, I'm starving by the time I load up my plate, so everything taste amazing
Last bit of advice, make smoothies!

Don't sub veggies for veggie juice from a store. Those juices have been pasteurized and loose their nutritional value. Now if you buy a juicer or have fresh juice options, you will get the vitamins.

Peanut sauce. Seriously. Any veggie is better with peanut sauce. Don't have sauce - heat up peanut butter.0

I struggle to get in veg, but not because I don't like them. Just most of the time they seem like too much work.
Do you have bad veg history? There were some icky veggies served at my house growing up (canned spinach, frozen brussel sporouts, plain lima beans), but I guess I was lucky that most years at least someone in the family had a garden and then we would get good stuff.
Roasting and sauteeing are my faves for most veg. Steaming is alright for carrots and cruciferous veggies.
Try adding in veg with something that you know you like already like rice, pasta, soup, spaghetti sauce, etc. If you like Indian or Thai a veggie curry is super easy to do and is far from plain.0 -

you shouldn't be cooking with extra virgin olive oil, for various reasons. one, it has a low smoke point and burns quickly, and you lose a lot of the health benefits and the flavor. try using canola or any vegetable oil, and then drizzling the extra virgin olive oil on top when it's ready to serve.0 -

What works for me is a vegetable breakfast smoothie:
6 aspargus spears
Broccoli
200gr of spinach
Chia seeds
Flax seeds
6-7 chunks of frozen pineapple
200ml of vanilla almond milk
I would never "eat" those veggies any other way and it is surprising how filling that smoothie is. I can sip it all day without getting hungry.

I hear you, I absolutely hated veggies growing up. I still eat them first to "get them over with" as my parents would say. Not the best encouragement! I didn't have the best variety or interesting preparation when I was growing up. Now, as my husband does most of the cooking (but doesn't like veggies), I just ate whatever he gave me. It always felt like too much work to throw something else on the plate.
Even though I've been doing smoothies with spinach in them for months, my trainer is now insisting I eat a veggie with every meal, even if it's just broccoli slaw with a bit of dressing. I started doing this and broke through my 2 month plateau. I'm pretty narrow minded to the broccoli slaw, spinach (raw or cooked), mushrooms, carrots, kale, onions, asparagus....I'm trying to open my mind. I'm going to start experimenting with some more veggies that I normally walk right by. For instance, zucchini may technically be a fruit (but it's GREEN!!), but it is SUCH a good (blander) substitute for spinach in my smoothie and just to eat raw. I haven't tried to sautee and season yet, but we'll see.0 -

Sneak some into other foods. I made some ground chicken patties today with zucchini and carrots (along with bread soaked in cream.. but yeah, you could do without that). Just processed everything together into one mass. Not that I don't like veggies, I've actually always been obsessed with them, but it was just a trick to make meat moist. You could barely taste any veggies in there.
Just be creative and sneak them into things you like, top your pizza, shred for omelets, julianne for pasta..etc0
