4 cups of chicken broth............low salt your choice again
3 cups of tomato juice
1/2 ts of garlic powder
1 ts of Italian seasoning crushed with 2 spoons
1/4 ts black pepper
1 16oz frozen mixed veg your choice either with broccoli with carrots either one
1 can of red or white kidney beans cannellini your choice drained n rinsed

in 3 quart pan med heat.......add broth.....tomato juice......garlic powder......Italian seasoning.....pepper....veg of your choice..bring to boil..........reduce to low heat cover 10 mins now add beans cook till boils .................enjoy 90 cals per ser

    I've been making similar soup/stews for a while. A 28 oz can of crushed tomatoes, about 1-2 cups of veggie broth, lots of cut-up veggies (onions, mushrooms, zucchini, carrots, peppers - whatever's in the fridge, really) - spice to taste (we like a lot of pepper, and I usually throw in some cumin, fennel and oregano), a can of whatever beans, drained (we use pinto, cannelini or chick peas) or a cup of made from scratch beans (again those three, plus I usually have cooked small red beans around). Simmer for 1 1/2 hours. It freezes really well, too.

    OK, so I'm cheap. What about water instead of bought chicken broth? (Although I'm not adverse to making my own chicken broth). Do you recommend any particular veg or herbs to bring up the flavor if I go with water?

    You could probably add 1 or 2 tbs of Knorr Veggie soup mix to the water and if you have some ripe tomatoes, chop them and add them too.

    Cabbage,diced turnips & celery.Any veggie you like. I don't add broccoli because it turns a nasty color after a day or two.
    Thyme,rosemary,bay leaf,just about any seasoning.
