There are lots and lots of sites that have yummy crockpot recipes.
I love Hungry Girl...here's her Slow Cooker page...though I think you could also search crockpot.

Allrecipes.com can be very good too, but as it's not just a low-calorie site, watch out for the calorie counts. But I've found some good ones on there too.

I have done several of her recipes and they are running about 2/3 good, 1/3 never make again.
ETA: I probably make about 75% of my meals in the crockpot.0 -
Crockpot chicken tacos:
boneless skinless chicken thighs
a can of chipotle with adobo (chopped)
a half a jar of salsa
onion and garlic
turn it on low overnight and you're good to go.
Top with cheese and cilantro or whatever you'd like0 -
Ethiopian Chicken Stew (Doro Wat)
1 (14.5-ounce) can diced tomatoes, undrained
1 1/2 pounds boneless, skinless chicken thighs
1/4 cup fresh lemon juice
2 tablespoons butter
3 large onions, diced
1 teaspoon ground ginger
1 tablespoon paprika
1 teaspoon cayenne pepper, and more to taste if you'd like
1/2 teaspoon black pepper
1 teaspoon ground turmeric
1 cup water
The Directions.
Empty the tomato can into your slow cooker. Put in the chicken thighs, and add the lemon juice. Now add butter, onion, and ALL of the spices. Pour in the water. Cover and cook on low for 6 to 8 hours, or high for 4 to 5. Your stew is done when the onions are soft and translucent and the chicken is cooked through and begun to fall apart. Thicken juices with 1 Tbl cornstarch if desired and serve over brown rice.0 -
I do Teriyaki chicken a lot. Just take chicken thighs and a good quality Teryaki sauce and throw into freezer bag. It can be taken out of freezer the night before and thrown in for 6-8 hours when you are ready for it. The chicken thighs stay moist during the cooking process.
Potato soup is good: potatoes, chicken broth, light half and half, onions and seasons. Top with sour cream.0 -
