    Since I woke up at 11 today sick, my day is a little off. Right now I'm having coffee, pretzels with hummus and a nectarine.

    I usually have hard boiled eggs and turkey sausage, with homemade pita chips and hummus. That is always delicious.

    My new obsession has been chicken wraps--either grilled chicken, deli chicken breast, or even a couple of chicken nuggets aren't too bad and they are delicious. Then with some lettuce and other greens.

    On days I don't feel like packing, I loud up on snacks (carrot sticks, granola bar, fruit salad, pretzels, banana etc) then have something more filling for dinner :)

    Homemade Reduced fat Spinich and Ricotta Lasagna, whole wheat noodles. Yum.

    Normally I have a sandwich and an apple but once or twice a week I'll bring leftovers and today is one of those days.

    This recipe has no name but is an old WW recipe I found years ago...

    2-3 bell peppers chopped
    1/2 medium onion, diced
    1 can petite diced tomatoes (w/ chilies if you like heat)
    14 oz turkey keilbasa, sliced or halved and sliced
    2 cups cooked rice or 4-6 oz egg noodles

    Saute peppers and onion until softened. Add tomatoes and keilbasa and heat through. Add rice/pasta
    Done!

    Last night, instead of using turkey keilbasa, I used some Chourico (chorizo) and it gave it a nice zing. Not too many more calories, surprisingly, and hubby liked it a lot so I'll probably use that again.

    Chicken salad made with Greek yogurt, grapes, apples and raisins over a bed of romaine lettuce. Topped with toasted walnuts. Mm...
