I'd like to branch out and try some new types of cheese. What are your recommendations?
I like cheddar, provolone, mozzarella. I don't like Swiss. Is there anything similar to that flavor profile that would be a good place to start?

I don't really care for swiss cheese either but i do love a good Cheddar with Jalepeno peppers mixed in.

swiss is kinda unique. The only cheese i don't like is bleu (moldy type cheeses).
I suggest that you throw a party. That way, you can serve a bunch of different cheeses, sample them, make note of what you do and don't like and justify purchasing all the cheese because... well... party!

I love goat cheese, creamy served over chicken breast with a little butter sauce or crumbled cooked inside a split breast wrapped in bacon!
Feta is nice as well.0 -
Here are a few to try if you can find them where you live, they all have a mild flavors: Havarti (soft, delish), Gruyere (hard and mild), Monterey Jack (like a mild cheddar but white), Colby (like a mild cheddar) Muenster (soft, it has an orange coating on the outside which is edible), Gouda or Edam (both are mild, these are similar and normally wax coated, which is not edible). Port Salut is my favorite! It's soft and creamy and so good on crusty bread. Or triscuits. Or fruit. Whatevs. I've even mixed it into mashed potatoes.0
