Massive "shrimp cake" for under 300 cal!
I invented this one about a month ago and my wife has made me make them about six times since. If you are looking for a huge portion of food at little calorie expense, read on! The following makes two large cakes.
Ingredients:
1 lb potatoes - peeled (white or Yukon work better than red or russet)
1 egg white (or 3 tbsp of egg white from a carton)
Roughly 6oz shrimp... Peeled and cooked (boiled is best, cut up if they are bigger than 50ct)
1 red pepper
1 tbsp mayo
Salt, pepper, dill, garlic powder, any Cajun-Caribbean-seafood-chicken style seasoning you like.
Powdered butter flavor for popcorn is a good bonus, but not necessary
Directions:
Boil the potatoes for 45 minute to an hour, until they can be mashed with ease.
Mash the potatoes in a bowl, season with salt, pepper, garlic powder, your seasoning of choice, and the butter powder.
Add the egg white
Blend or process the red pepper.
Pour HALF into the potato bowl and half into a small bowl (for sauce later)
Mix the potato bowl until pretty smooth, then add the shrimp
Have a 6-9" non stick pan going at medium to high heat and sprayed with PAM or other equivalent
Spoon half your potato-shrimp mixture into the pan and spread your cake evenly.
I find it easy to have two pans going, because after roughly 5-7 minutes, you are going to flip it, and it's much easier to put one pan over the other and flip the whole thing. Otherwise it gets messy.
Cook the other side for the same 5-7 mins and slide onto a plate. Repeat for your second cake.
Mix mayo in with the leftover pepper purée and add some salt and dill. Spoon or pour over your cake.
The cake comes in at roughly 275 calories and the sauce at 75 calories per serving. These will be huge, filling, and delicious if done right. I will post a pic the next time I make em.

Really depends on the potato and how hot the water is... Bottom line, you want to be able to mash the potato super easy, even with a fork.0 -

You know, it's really funny. I always see recipes mentioning that it takes 20 minutes to boil potatoes for mashing... not in this house (heck, carrots either, they take close to one hour to be done!). Go figure.0 -

Having trouble resizing... so you'll have to bear with me.
1lb White potatoes in bowl with red pepper ready to go in there...
We are now mixed up with egg whites and seasoning... mashed potatoes anyone?
Boiled shrimp are ready to go!
Mixed in and split into our two servings!
Spooned into the pan and cooking like a champ (pam is sprayed)
Five minutes later... it's flipping time!
And we are done! I cannot overstate the importance of the sauce and what it adds!
