    I just made it vegan style (though I'm not a vegan but a vegetarian), substituted TVP and black beans for the beef along with mushroom broth as the base instead of the beef broth. I added an extra onion and two fresh peppers. SO GOOD! There's a boatload of it left too, and I can't wait to freeze it and eat it again and again.

    I tried this recipe and let me tell you.. It is AWESOME!!! Super filling and very tasty :love: :love: Loved it.. It is even wonderful without the rice.

    Thanks for the recipe. I made it tonight and it was great! I used salsa verde instead of regular salsa. Next time I will add black beans and fresh cilantro!

    Do you use fresh salsa or jarred? Or does it matter?

    Also, do you drain the can of diced tomatoes? I'm assuming no since people posted the recipe needs a bit more liquid...

    I just use the big bottle of Pace. Watch out for jarred salsas that add sugar - there are huge calorie differences from one to the next.
    And I use the whole can of tomatoes undrained ... maybe that's the difference for people who are needing to add more liquid. Thanks for bringing that up.

    Just made this and it was awesome! I actually forgot the salsa and added black beans, and used white rice and ground turkey. But it was pretty great and my husband loved it, thanks again!
