Where should my goals be?

I'll be 42 next month. I'm 5'7" and 172lbs. I'm mostly sedentary, but am planning to start walking again this week (this evening, in fact). I have a bad habit of eating too much junk, but even when I try to eat healthy I find that I make choices that I think are good, but when I read the nutrition info it turns out the food is not so good.
So, I'm basically starting over. Knowing that I don't exercise much and I'll be starting off slow, what should my nutritional goals be? How much protein? How much in carbs? Right now MFP has those set at equal percentages. Should I change them?
I'm also planning to cut back on my meat and dairy. I'd like to eventually go vegetarian, maybe even vegan. So I'd love nutrition tips from any vegetarians/vegans out there.
I should also mention that my husband and I have been trying since January to have another baby. I know the odds aren't good at this point, but it's something to keep in mind.

ETA: I also figured out how to open my food diary up to the public, so feel free to check it out. I know it's not good, but I appreciate any advice I can get.

Hello, I’m not a vegan but do strive to eat primary healthy lifestyle by only eating fish couple times a week with couple cheat days throughout the month.
I would say the best thing you can do if you’re going to make a switch to vegetarian/vegan. Slowly make the transition of reducing or eliminating certain foods from your lifestyle. For example if you enjoy eating meat daily, select couple days out of the week as meatless Friday and Monday. It will help you to adjust from not wanting to eat meat so often. Eat high fiber foods which helps to keep fuller longer additionally eat plenty of vegetables. I would suggest the best time to walk is in the morning on an empty stomach.
Almond, Soy or Coconut Milk instead of regular milk
Fish or beyond meat instead of chicken and beef
Daiya cheese(vegan) instead of dairy cheese0 -
Thank you for the tips! I know I'm going to have to cut back slowly. I worry about cravings. Some days I just crave a Big Mac even though I know it's not healthy, lol.0
