Recipes using coconut cream?

Hi all!

My husband bought a can of coconut cream recently, instead of the coconut milk that I had asked for ... so I'd like to use up the coconut cream somehow. Does anyone have any good recipes that use coconut cream? I'd prefer some sort of baked goods recipe if possible ... we've had a lot of Thai-style stir-fries recently!

    Coconut cream can be used in place of coconut milk in all recipes. They are the same except that the latter is diluted with more water. I need to point out that traditional coconut milk is NOT the same as the coconut milk BEVERAGE that has gotten popular in American grocery stores.

    I'd recommend using the coconut cream in a Thai curry. If you find it too creamy for your taste, you can just add in a little more water to make it the same consistency as curry made with coconut milk. Be warned that coconut cream, like coconut milk is very high in calories. The liquid spoils relatively quickly after you open the can so you can't really store it in your fridge for long if you wanted to use a little at a time. The best thing to do is to make a batch of curry and eat it throughout the week or freeze some of it in containers to be eaten later.
  • My partners made that mistake too! Ive used it in a soup with butternut squash chillis and onions.. its yummy but high in calories.. its a nice treat through.. or for my children i add chicken chunks to the soup as an alternative to curry and they love it

    Thanks for the ideas guys! Any suggestions for making desserts (cakes, pies, etc)? We just had a Thai coconut curry and I don't really want to do something similar again so soon ..
