    You can do a 50/50 mix of cauliflower and potatoes and never know the cauliflower is there when mashing.

    I am in the process of making this "shrimp cake". My husband and I are having it for dinner tonight. The potatoe / pepper/ cajin mix tastes wonderful so far! I just added the shrimp to the mix and placed it in the fridge until ready to be pan fried.

    The hardest thing I had to do was find the "cajin" seasoning, not readily available here in the Southwest! The only seasoning I could find was by McCormick, called "Perfect Pinch" -- Cajin, and I think it is critical to the recipe, so I am glad I persevered and found it.

    I have a question about the red pepper. I am used to flaming the peppers to remove the skins, so I did so before putting the pepper in the blender to puree. Does the recipe call for this? I also added the cajin seasoning to the sauce.....

    I will be making this sometime this week! Thanks for posting. @Chopsart, I assume flaming it is similar or the same as roasting it? Either way, I think that would enhance the flavor of the shrimp cake! Great suggestion!

    You know, it's really funny. I always see recipes mentioning that it takes 20 minutes to boil potatoes for mashing... not in this house (heck, carrots either, they take close to one hour to be done!). Go figure.

    We just had the "Shrimp Cake" for dinner, and as my husband said-- "this is a keeper". This dish is tasty, low calorie, protein laden, and very filling. I am planning on making it again at the end of the week.

    I will admit I had trouble flipping such a large cake over in the pan while browning, the first one was rather a mess to look at. I decided to divide my half into 2 parts so it was easier to flip.

    Try it, you will like it!
