banana/blueberry protein bread

Ingredients:
oats 1.5cup
250g low fat cottage cheese
3 scoops (120g) whey protein
6 eggs
6 eggwhites
2 medium bananas
125g blueberries
Instructions:
Preheat oven to 200deg celcius
Blend all ingredients together.
Put in non stick baking tray and put in oven. (I put alfoil above it so that the top doesn't cook too quickly)
Chopped up into 18 the nutritional stats are:
105 cals
9g carbs
3g fat
12g protein

Something similar I make-
Makes 12 protein brownies:
8 egg whites
Nonfat Cottage Cheese, 1 cup
100% Whole Grain Oats 2 cups dry
Eas Myoplex - 100% Whey Protein Powder - Chocolate, 4 Scoop
Mccormick's - Pure Vanilla Extract 1 teaspoon
Baking Powder, 1 teaspoon
Splenda - 0.5 cup
Cocoa - Dry powder, unsweetened, 0.25 cup
Water - 0.5 cup
375degrees for 20ish minutes ha.. watch them!
Per Serving:
calories 125
carbs 14
fat 2
sat fat 1
protein 15
sometimes I add banana which is super good but ups the carbs.. and I usually top them with peanut butter!

Both sound amazing! I think I might try these closer to the weekend so I can give most of it to my brother and his wife. Afraid if left around, I'd eat the whole thing! I'm a sucker for blueberries. lol0

Would either of these recipes freeze well? I have no need for 12-18 servings of bread/brownies around the house just for me, so could I freeze half of the bread once baked and then take it out next week to eat? Just wondering what the consistency is like. Thanks!0

Consistency just depends on how long you bake it. Mine was just a little crispy on the outsides and nice and moist in the middle. I have kept mine in the fridge (4 days I think?) and it still tastes the same.
I have been heating them up in the microwave and then putting some low fat choc dessert or yoghurt over the top. Delish0 -
Thanks Chris - I made the brownies today (needed a choc fix) and plan on topping them with 1/2 Tbsp natural PB. They smell AMAZING but are still too hot to eat :grumble:

Edit: Do you use vanilla whey protein? I only have choc and choc peanut butter right now, but i'd be willing to try the vanilla. Just seems boring to me to buy a whole tub of it!0 -

My brownies LOOKED great out of the oven, but the middles didn't set at all (even with an extra 10 mins in the oven) and they don't at all have the consistency of brownies or taste all that chocolate-y. They are edible, and packed with protein. I'll give it that. But not much else, unfortunately. Doubt I'll be making them again :ohwell:

did you cover it with alfoil? If you do that and keep the temperature lower (I dropped from 200c to 150c) and cook it longer, you should get more even consistency.
BTW I used unflavoured whey protein.

Finally got around to making the muffins! I used:
INGREDIENTS
8 egg whites
1 cup cottage cheese
2 cups oats
4 scoops whey protein
2 tpns vanilla extract
30g baking cocoa
stevia concentrate (6 squirts mixed 50/50 with water)
1 cup water
DIRECTIONS
Blend oats in coffee grinder.
Put all ingredients in mixing bowl.
Mix with electric mixer.
Pour into greased baking pan (or baking paper) and cover with alfoil.
Put in oven at around 150c. Reduce temp if the centre isn't cooking through.
Cut into 15, stats are:
118 cals
8g carbs
2g fat
15g protein
114mg sodium
1g sugar
1g fibre

The brownie recipe is AWESOME - Just an FYI. I've made it a few times now, halving the recipe, omiting the splenda and adding in 1 really ripe banana. I cook it for 17-20 mins at 375F in a 9x5 loaf pan. Makes 6 servings and it's AWESOME. They keep in the fridge for at least 2 weeks. Great snack on the go and perfect warmed up with a little PB :bigsmile: Thanks again for the recipe!0

Ive been making these brownies weekly now and found a great recipe that I love! Here are my changes:
1 cup oats
1/2 cup cottage cheese
1/2 cup egg whites
2 scoops whey protein
2 Tbsp cocoa, unsweetened
1/2 tsp each vanilla and baking powder
1 cup unsweetened applesauce
Blend and bake in a lined 9x5 loaf pan @ 325F for 27-30 mins, or until set. Cover with aluminium foil for the last 15 mins and let cool in the pan for 10-15 mins once done cooking and before removing. Cut into 6 even rectangles. So moist and delicious. Great crumbled over yogurt and fruit :happy:0 -
