Tell me your favourite quinoa recipies

1/2 C quinoa
1 C chicken broth
1 C of tri veg seasoning (celery, onion and peppers)
1 C of white mushrooms sliced
1 TBS chopped garlic
1/2 tsp Morton's Nature Seasoning
1/4 tsp thyme leaves
1/4 C pine nuts
1 TBS olive oil
1 TBS butter
Rinse and toast the quinoa for a bit in a skillet and then add chicken broth, cook until tender. Saute vegs and pine nuts in olive oil until done. Add seasonings and blend. Combine quinoa and sauted vegs together and add butter. I let this rest for 30 mins to blend flavors then reheated.
This was my first experience with quinoa and I wanted to eat the whole dish myself. Not sure if I would like it cold or sweet but I sure will be making this again and might add some chicken to it.0 -

Southwest Quinoa Salad - black beans, corn, cilantro, lime, quinoa, tomato etc....
Here's a recipe, but I pretty just make it as I feel like it. Don't forget the cumin!

Also... I have been gluten-free for 5+ years and missed my mom's kibbeh (we're Lebanese), so my mom and I developed a Quinoa Kibbeh recipe that has been a HUGE hit with my family (some people, including me, like it better than regular kibbeh made with bulgar):

For 1/2 cup quinoa I take a 28 oz can of organic diced tomatoes, drain the liquid and use 1 cup of that for my cooking liquid. (Liquid content varies per can, if it's short add a bit of water, it won't be much). While the quinoa is cooking I saute an onion and a few mini bell peppers in cooking spray, add them and the can of tomatoes at the end of cooking and heat thru another few minutes. Toss in some chopped basil, and have some instant awesome. Garlic and other seasoning may be adding to the quinoa while it's cooking, depending on your taste.

thanks for posting this because i was having major issues with quinoa. i tried to make it the way a friend told me---in chicken broth with some italian seasoning---none of my family members liked it and neither did i...
Are you rinsing the quinoa really well before you use it? It can have a bitter or soapy taste if you don't rinse it before you cook it.

You should keep in mind that quinoa is very nutrient and CALORIE dense. VERY. Over 600 calories in a standard cup and boy oh boy it is easy to eat!0

600 calories per cup is for uncooked
As it nearly triples in volume it is only 220 calories per cup cooked. Which I think is reasonable.0 -
This is how I like it. Served cold.
2 cups red and white quinoa (mixed)
kosher salt 1 tablespoon extra-virgin olive
1/3 cup extra-virgin olive oil, more as needed
3 tablespoons white vinegar or 3 tablespoons rice vinegar, more as needed
3 tablespoons fresh lemon juice, more as needed
1 -2 tablespoon finely grated lemon zest
fresh ground black pepper
3/4 cup chopped roma tomato
3/4 cup diced English cucumber (1/2 inch dice)
1/2 cup thinly sliced scallion
3/4 cup diced red bell pepper (1/4 inch dice)
1 cup cooked red lentil
1 cup cooked mung beans
2 tablespoons chopped fresh cilantro (leaves and stems)
2 tablespoons chopped fresh flat-leaf parsley0 -

1 cup cooked Quinoa with finely chopped onions, tomatoes, cilantro, peanuts and lemon.
Also add tamarind, chopped garlic, mint and Jalapeno pickle.
Salt per taste and a pinch of sugar.

Saute a small onion, green and yellow squash until lightly brown. Add a cup of vegetable broth and a small can of diced tomato. Bring to boil and add 1/2 cup of quinoa. Reduce heat and simmer for 20 min. Yum0

Mediterranean Bean Salad in a Jar Recipe
Prep Time: 10 min
Ingredients:
( Serves 4 )
4 whole 12-ounce mason jars
1 cup cooked Israeli couscous (prepared according to box's directions) **I use *quinoa* instead of the Israeli couscous.**
2 cup garbanzo beans (canned - drained and rinsed)
1 cup cannellini beans (canned - drained and rinsed)
1 cup black beans (canned - drained and rinsed)
1 cup feta cheese (crumbled)
1 cup cucumber (diced)
1 cup tomato (diced)
Garlic-Lemon Dressing:
2 whole lemon (juiced and zested)
2 tablespoon shallots (finely chopped)
1 whole garlic clove (minced)
2 tablespoon olive oil
salt and pepper (to taste)
Directions:
1.To make dressing: In a small bowl, combine lemon juice, zest, shallots, garlic, olive oil, salt and pepper. Whisk until well-combined. Set aside.
2.Assemble each mason jar in the following order (this special order will ensure ingredients don't become soggy):
•First (bottom) layer: 2 or 3 tablespoon lemon-garlic dressing
•Second layer: 1/4 cup cucumber
•Third layer: 1/2 cup garbanzo beans
•Fourth layer: 1/4 cup diced tomatoes
•Fifth layer: 1/4 cup cannellini beans
•Sixth layer: 1/4 cup black beans
•Seventh layer: 1/4 cup couscous
•Eighth (top) layer: 1/4 cup feta cheese
3. Store in the refrigerator until ready to eat. When ready to serve, dump jar's content into a bowl, toss, and enjoy!

Half the recipe came out at 515 calories with 21g of protein... Pretty good breakfast! (I didn't use butter and reduced the sugar to 30g, which is still a lot, but heck). Made it last night and left it in the fridge overnight, and it was relatively thick (I put a bit more of cornstarch).
Yesterday I just cooked some onions, peppers and corn in a bit of olive oil and added some quinoa (already cooked) and salt and pepper... It was delicious. Even the kids loved it.0 -
This turkey quinoa meatloaf is AMAZING!!!! My boyfriend honestly asks me to make it on a weekly basis. One of those meals that tastes so good, you can't imagine that it's healthy.
