Hitting Calorie Goals

I find that on days when I go to the gym, I have no problem hitting my minimum calorie goal food wise, which is understandable because you body demands more fuel. However, I find on days where I don't go, I have a really hard time hitting 1000 calories, never-mind my 1400-a-day goal. Does anyone else have this issue and have any suggestions on combating it? I find it hard to eat food when I don't actually feel hungry, and I only ever drink water after completely succeeding in cutting out fruit juices, fizzy drinks and alcohol.
Advice for a lactose-intolerant vegetarian for boosting their calorie intake?

    Beans are high in protien and fiber and are calorie dense. almonds and rice maybe?

    I don't really incorporate rice into my diet, come to think of it, I'll definitely give that a go, I always get full quite quickly with it though! ^_^
