Why are my calories so far off?

Has this ever happened to anyone?
My goal macros are 60f/360c/165p equaling to 2640 calories
Today I ate 60f/361c/170p yet MFP is only showing 2,543 for food?
Are fiber calories not included on a lot of labels? Because I did have 64g fiber today which is quite close to my max of 70g
How are my calories nearly 100 off, and should I eat an extra 100 to get to my goal intake even though my macros are almost perfect?

100 calories is nothing. Even really good logging can be off by 10% on a regular basis.0
