Tonight for dinner I made...

The easiest meal! I preheated my oven to 425 degrees, cut a whole red bell pepper into slices and scattered them on a baking sheet sprayed with Olive Oil Pam. Then I scattered 12 large shrimp on the pan, squeezed the juice from half a lemon over all of it, sprinkled minced garlic (the kind from a jar) over the whole thing, and cracked black pepper on top. 14 minutes in the oven, flipping halfway, and done! I estimated it to be 2 servings at about 100 calories per serving. You can put it on top of noodles, cous cous, salad, rice... Whatever you want! It was pretty tasty. What did you have for dinner?

I had corn chowder for dinner. Since i wanted some type of soup because its snowinggg and freeezinggg!! It was good too0

chicken fajita stuff with rice.. my creation. Serves 3. Great leftovers!
9 ounces chicken breast, cut in to pieces
1 cup rice, cooked
1 cup onion, chopped
1 cup green pepper, chopped
1 Taco Bell fajita seasoning packet
Cut chicken in to bit size pieces. Spray frying pan with Pam non-stick spray.
Add chicken, green peppers and onions.
Cook until chicken is done and veggies are tender.
Add cooked rice.
Add 1/3 cup water and Taco Bell seasoning packet.
Stir and serve once mixture is heated through.0 -
I had Salmon. Only half though. This is the first time I had it and I'm not a fan. Can't say I will make that again. I also had asparagus and pasta with sauce and meat.0

It's only 4pm here in California, but I am making baked bbq chicken. Put raw chicken in a pan, sprinkle with garlic & pepper (or any seasoning you prefer), add some bbq sauce and bake!0

I took the easy way out..Chicken Helper creamy chicken noodles. Only 280 calories for a 1 cup serving. Pretty good.0

It is taco night at my house, one of our favorites.
Small dempsters soft tortillas (only 80 calories each)
ground turkey seasoned with garlic pwrd, chili pwdr, cumin, paprika and pepper
Avacado slices
LOTS of veggies (my favorite is green peppers, cucumber, lettuce, and cilantro)
1 tomato cut into small pieces and mixed with 1/2 c salsa (makes the salsa taste much "fresher")
This is one dinner that there are never any leftovers!0 -
That sounds great! Chicken spaghetti with corn and peas here (I know, I know, it sounds like carb overload to me too... but somehow it worked out for the day). Quick and easy because it was from the freezer!

Golden Sesame Tofu with brown rice!
1 package of extra firm tofu, pressed to get most of the water out of it, then dusted with flour and sauteed in 2 TBS canola oil. Drain on paper towels.
For the sauce:
2 TBS Agave (you can also use honey)
3 TBS soy sauce
2 TBS Seasoned rice vinegar
2 tsp minced ginger
1 clove garlic minced (I ran out and used 1/2 tsp garlic powder instead)
Heat the sauce to a gentle boil and let sit while the tofu is sauteeing.
Toast 2 TBS sesame seeds. Toss everything together. 285 calories per serving! (serves 4)0 -
Sauteed broccoli, cauliflower, onion and mushrooms in country crock light margarine. Stuffed a flour tortilla spread with roasted red pepper hummus!! It was delicious!0

Hmm... I made two packages of strawberries and cream oatmeal and Jimmy Dean D-Light Egg, Cheese, Potato, and Sausage bowl. Haha. Breakfast for dinner! I didn't feel like making anything, so just popped some stuff in the microwave. Lawls.0

It was okay - I actually put less salt when making it but then ended up salting my chicken. It tasted bland but I am getting over a cold and am still stuffy. I also used less flour and butter than it says. I was going for an imitation of Johnny Carinos angel hair with artichokes (forgot to add some artichokes though!) and it was not as good - but probably healthier!0 -

tonight i made shepherd's pie with ground turkey (and frozen green beans from last summer's harvest!) --- wrote down my ingredients as i went along (yes i measure and weight EVERYTHING lol) --- 197 cals / serving
plus i made lunch and/or dinner for tomorrow: Grilled Chicken with Cranberries Salad --- 225 cals/ serving0 -

i had a lean cuisine because i am at work and between running to the tattoo shop and the book store for textbooks, on opposite sides of the city, i had no time to cook something this morning. Tomorrow.0

Homemade lentil soup with fresh herbs and vegetables, and a frittata with cheese, herbs, and bits of leftover smoked ham! Absolutely delicious.0

Salad with lettuce, red cabbage, veggies, dried cranberries, sunflower seeds and Vidalia Onion dressing.
Yummy and low cal!
But I ended it with a big homemade chocolate chip cookie...oh well.0
