Add cabbage and stir and lower heat and cover and let steam for 5-10 minutes until it is as tender as you like.
You can also add thinely sliced carrots to the trinity for more color and taste. This is a side dish, but could be used as the main dish .0 -

Chinese Fried Cabbage. So good. My dad makes this.
Brown some bacon pieces in a large pan. Remove the bacon and set aside.
Shred cabbage and slice onion thinly, and sautee in the bacon fat in the large pan.
When soft, add soy sauce and cracked black pepper to taste. Add bacon pieces back in. Eat.0 -
I also love to make soup with leftover diced ham, black beans, onions, garlic and sauteed shredded cabbage in a spicy broth.0

This Indian cookbook I have, "Vegan Indian Cooking" by Anupy Singla, has a recipe for Punjabi cabbage that is awesome. It is cooked in either a slow cooker or the stovetop and makes a curry of cabbage, potatoes, and peas with beautiful spices.0

I primarily saute it or roast it. I also make my own kraut that I just eat because it's delicious...I don't need to put it on anything...just straight to the plate. I also really like it in stir fry. I usually use red cabbage for all of the above.0
