Sweet and Spicy Salmon
Servings: 6
Serving Size: 6 ounce fillet
Nutritional Info: 280 calories, 13 g of fat, 5 g of carbohydrates, 1 g of fiber, 34 g of protein

Ingredients
2 tbsp brown sugar
1 tbsp chili powder
1 tsp ground cumin
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 tsp ground ginger
1/2 tsp smoked paprika
6 6oz skinless salmon fillets
1 tbsp olive oil

Instructions
1. In a small bowl, mix together all of the dry spices.

2. Spray each piece of salmon with cooking spray and rub the spice rub onto the fish.

3. Using a saute pan, heat 1 tbsp of olive oil over medium heat. Add the salmon and cook on one side for 4-5 minutes. Flip the salmon and cook for an additional 4-6 minutes until done to your liking. This would also be great grilled.

    I'd substitute the brown sugar for a low/no-calorie alternative personally.

    The brown sugar is needed in this recipe because of a crust that forms.We art talking about 2 T here, and not into artificial sweeteners on meat of any kind......

    I have done something similar withe the Splenda /brown sugar mix. I cook for diabetics. I go salmon fishing every summer in Alaska. The guides recommend using a bit of brown sugar . It really adds to the flavor. You an also do this using a good pre mixed salmon seasoning. Salmon is awesome.
