    Chicken would be fine. Season it up with garlic, basil, and oregano to give it some Italian flair.

    Canned tomatoes are fine... I won't judge.

    Does the tomato sauce just go on the top or is that layered too?

    I make a lot of dishes that usually require pasta with zucchini or eggplant. The first time I made it with zucchini was actually with my bf's family....and they are 100% italian. This sounds amazing :] it is a versatile dish that can be tweaked to your personal and dietary preferences..

    Oh, and to the people commenting about how it's not lasagna..

    I made this today and it is wonderful! My daughter loved it, and so did I.

    I added lots of Italian spices, and in addition I added an egg to the cottage cheese.

    Lasagna = noodles and beef. Pass.

    Lasagna does not require meat, much less specifically beef.

    It does require pasta, though. This sounds tasty but it is not lasagna.

    Thanks so much for the recipe... I made it, and ate the whole thing (massive amount of food for only 400 calories)!

    I used a vegetable peeler to slice the zucchini; but next time I think I'll use a knife so the layers are thicker.
