BEANS! (and Tempeh?)

I had tried tempeh a number of times and didn't care for it but just recently I realized that it's much better if you crumble it up. I just crumbled some up with bbq sauce and served with sauteed kale. It was great.
I also eat a lot of beans but one of my favorite recipes is white beans with scrambled eggs and pesto. Filling and protein packed meal.0 -

I adore tempeh! I have never thought it tastes bitter like some people do, but I assume it's like cilantro where some people love it and others think it tastes like soap
I like to crumble tempeh, sautee in olive oil, add a ton of shredded or chopped veggies (onion, mushrooms, zucchini, carrots, garlic, etc.) and then simmer with tomato sauce for a Vegan Bolognese to be served over pasta. Have you ever heard of the blog Post-Punk Kitchen? She has a ton of tempeh and bean recipes (all vegan, but you can add dairy, etc. if you just want vegetarian).0 -

I boil up black beans or garbanzo (chick peas) a few times a week, mix em up with various combos of feta, roast veg, tomatoes, raw onions, basil, chili sauce, lime, avocados. I buy them in 500g pack £1 odd each and get 3 portions of 166g, which in turn I get 3 side dishes out of. Value for money! Protein, and vits, lovely textures, tasty. Win win win!0

Yellow split pea dal is yummy. I got the recipe from the cookbook The New Laurel's Kitchen
1.5 cups of yellow split peas
1 tsp salt
1 onion
1/2 green bell pepper
1 tsp. turmeric
1/2 tsp. curry powder
1 Tablespoon Oil
1.5 tsp. black mustard seeds
Juice of 1/2 a lemon
Boil the split peas for 30 minutes or until the are tender, but not so long that they lose their shape. They should be rather dry, like mashed potatoes. Stir in the salt. While the peas are cooking, chop the onion and the green pepper. Combine with the turmeric and curry powder.
Heat oil in a large heavy pan with a lid. When theoil heats up, add the mustard seeds and cover. the seeds will pop noisily and when the sound quiets down, immediately add onion mixture. Saute until the onion is transparent and golden, and stir into peas along with the lemon juice. Serve alone, over rice, with Indian bread, or what ever you want. I have enjoyed it over broccoli and cauliflower.
My notes: I doubled the spices, used a whole red pepper, (I didn't have a green one), and I didn't use lemon juice because I didn't have a lemon. It was still wonderful. Also, black mustard seeds can be found in health food stores and Indian markets, but if you don't have it, just don't use it. But if you can, use them; they add a lovely nutty flavor.0 -
Sorry to be such a fussbudget, but when it comes to food, I'm such a geek. The Yellow Split Pea Dal recipe above turned out kinda thick. I thinned mine with a little of the liquid from cooking the split peas to make it more saucy. You could add water too if you would like to thin it out.
Also, there is only a tablespoon of oil in the whole dish, and if the food you are sauteeing sticks, add a bit of water as you go and it will not stick.0
