Supreme Pizza Cauliflower Casserole (250 calories)

I have a list of favorite pizzas so long, that it stretches out the front door. I'm sure most people do. But, who here has a favorite pizza that's also a low-calorie casserole? No one? That's what I thought. You HAVE to give this a shot...

Supreme Pizza Cauliflower Casserole (Peace Love & Low Carb)

INGREDIENTS:
Large Head Cauliflower – Trimmed into Small Florets
½ Cup plus 2 Tbs. Parmesan Cheese – Grated, Divided
1 Tbs. plus 1 tsp. Italian Seasoning – Divided
3 Cloves Garlic – Minced
3 Tbs. Olive Oil
Salt and Pepper – To Taste
¾ Cup Mozzarella Cheese – Shredded, Divided
½ Cup Pizza Sauce – Divided
2 oz. Canadian Bacon – Sliced
2 oz. Pepperoni – Sliced
1 oz. Green Bell Pepper – Diced
1 oz. Red Bell Pepper – Diced
1 oz. Onion – Diced
10 Black Olives – Sliced

DIRECTIONS:
Preheat oven to 400°. In a large mixing bowl, combine cauliflower, ½ cup Parmesan cheese, 1 Tbs. Italian seasoning, garlic, olive oil, salt and pepper. Toss until ingredients are well combined and cauliflower is coated. Line in a single layer, on a rimmed baking sheet and bake on the top rack for 30 minutes. Transfer cauliflower back to mixing bowl. To the mixing bowl add ¼ cup pizza sauce and ¼ cup mozzarella cheese. Toss until ingredients are well combined and cauliflower is coated. Transfer cauliflower mixture to a casserole dish. Layer on remaining pizza sauce and mozzarella cheese. Top with Canadian bacon, pepperoni, bell peppers, onion and olives. Sprinkle remaining 2 Tbs. Parmesan cheese and 1 tsp. Italian seasoning over top. Reduce oven temperature to 350° and bake 30 minutes.

    As someone who LOVES cauliflower, I think this looks awesome. Cauliflower, cheese, and yummy seasoning and toppings? YUM!

    Hmmm... sounds interesting! I bet I could sub some Tofurky italian "sausage" or veggie pepperoni slices for the meat in this to make it vegetarian.

    Just got a lovely bouquet of purple, gold, and white cauliflower, as well as a head of romanesco... Make a huge batch of colorful pizza veggies this week.

    Mine comes In a bottle by the spices and it says "itallian seasoning"... I think it's oregano, basil and some other spices. Love this in my pasta dishes.

    It's a classic combination of herbs such as thyme, oregano and basil. You can buy it pre-mixed, or even make your own. There are several recipes online to help you get the mixture just right. :)
