Question for People w/ Ice Cream Makers

What would happen if you tried to make stuff with non-fat Greek yogurt? What about skim milk? I'm thinking of picking up a machine today but I probably wouldn't be using full heavy cream recipes. I want to know what happens if you use a recipe in the machine that doesn't have any fat. Will it just form ice crystals all over?

    It's more about the chemistry part of the recipe.

    More than likely won't set up. I've used fat-free for half the recipe on ice-cream and had no difference other than it took longer to set up.

    I know that fat is very important in the freezing process so I'm wondering if I can still get an edible product by using non-fat ingredients. What would happen if I put the finished product in the freezer? Would it just freeze into a solid ice block?
