Spinach and Chicken Manicotti

Spinach And Chicken Manicotti
A wonderful combination of pasta, ricotta and marble cheese, tender chicken breast and leafy spinach covered with a perfect tomato sauce.
Ingredients
1/4 cup low fat ricotta cheese
2 oz manicotti pasta
1/2 cup marble cheese
1 cup cooked, diced chicken breast
2 tbsps garlic powder
2 tsps ground oregano
3 tbsps pepper
1 1/2 cups spaghetti sauce
2 cups spinach
Directions
Boil the manicotti pasta in water for about 6 minutes.
Meanwhile, mix together the ricotta cheese, spinach, chicken and spices to taste (add chili powder too if you like).
Drain the pasta carefully and as soon as you can handle touching them, lay out on the counter to avoid crushing and getting stuck together.
Holding the noodles with your finger blocking one end and cupping the rest, gently stuff them with the spinach mixture with a fork.
Place them in rows in a greased pan (Pam works great). Cover with spaghetti sauce.
Add 1/2 cup water to baking dish and cover with tinfoil (this will let the pasta absorb the additional moisture.)
Bake at 350 °F (175 °C) for 25 minutes and remove the cover.
Sprinkle with cheese of your choice and bake until almost all additional moisture is gone and the cheese is nice and gooey. Serve with a side of salad or steamed vegetables.

When I make stuff like this I put the filling mixture in a plastic bag, cut the tip off and squeeze it into the pasta. Makes it much easier and less mess too.0 -

It sounds really good but the calories look really low so I'm thinking that this is either not calculated right, or it is a very, very small serving. I guess it could be that low, because 1/4 cup of ricotta cheese, for the entire recipe, is not much at all.0 -
I make a casserole just like this. I do add chopped onions and lots of shredded cheese (the not-so-low-calorie-casserole).

This works well, the other thing I've found is to just go ahead and cut a slit in the manicotti when you lay it in the pan, then fill it with a spoon and just fold the shell back together with the split seam at the top. Then when you pour the sauce on it and sprinkle cheese on top, it all holds together anyway. I used to try to stuff a shell with a spoon and it never worked!0 -

Also, for those who have trouble with the Manicotti shells, using Jumbo Shells instead works very well and can be a little easier to fill.0 -

I looked at the original recipe and one comment said that she made 12 shells, added 1 cup mushrooms and 1 cup ricotta, and got a total 160 calories per shell. However, remember that it's got several kinds of cheese, not just ricotta.0 -

I haven't made manicotti in a long time, but 1/4 cup of ricotta, even with the other cheese, just doesn't sound like it would go very far. I'm pretty sure when I make it, the recipe calls for an entire 16 oz container of ricotta, plus 2 cups of mozzerella.
Mine is definitely not 117 cals/serving... but I also prefer my manicotti to be "well stuffed" with filling.
I like the combination though of the chicken and spinach!0 -
