Chicken would be fine. Season it up with garlic, basil, and oregano to give it some Italian flair.
Canned tomatoes are fine... I won't judge.
Does the tomato sauce just go on the top or is that layered too?0 -
I am making this tomorrow!0

Real lasagna or not, this looks good. Bumping0

I make a lot of dishes that usually require pasta with zucchini or eggplant. The first time I made it with zucchini was actually with my bf's family....and they are 100% italian. This sounds amazing :] it is a versatile dish that can be tweaked to your personal and dietary preferences..
Oh, and to the people commenting about how it's not lasagna..
It's gonna be ok :laugh:0 -
I made this today and it is wonderful! My daughter loved it, and so did I.
I added lots of Italian spices, and in addition I added an egg to the cottage cheese.0 -
Lasagna = noodles and beef. Pass.
Lasagna does not require meat, much less specifically beef.
It does require pasta, though. This sounds tasty but it is not lasagna.0 -

Thanks for the laugh!
Lasagna or not, I think this sounds really good.0 -
You forgot the mozzarella on top! That's the best part!0

Thanks so much for the recipe... I made it, and ate the whole thing (massive amount of food for only 400 calories)!
I used a vegetable peeler to slice the zucchini; but next time I think I'll use a knife so the layers are thicker.
Yummy dish!0 -
I have a HUGE farmers market zucchini I need to use tomorrow. Problem solved!0

I love lasagna. I have made it with zucchini and it is fabulous.0

Since when is the term 'LASAGNA' trademarked that it should only contain pasta??????
Zucchini and egg plant can be valid substitutes for pasta in lasagna. If you preferred layered pasta in your lasagna, that's fine and valid, but it is a different issue.0 -
Lasagna is technically a pasta... Like spaghetti is a pasta. People are nitpicky about these things. I just felt lasagna better explained the dish as opposed to, "cheese, sauce, meat, and non-pasta layered dish that resembles lasagna but isn't because it doesn't use lasagna noodles."1
