White Chicken Chili

Options
1 pound boneless, skinless chicken or turkey
4 1/2 cups cooked great northern beans (canned are fine)
2 cups fat-free, low sodium chicken broth
2 cups thick and chunky salsa
1 cup reduced-fat mozzarella cheese
chopped cilantro (optional)

Cook and shred the chicken or turkey and set aside.

In large saucepan, mix together the beans, broth, and salsa. Heat through and add extra broth, if desired.

Stir in the meat and cheese and top with cilantro, if desired. Salt and pepper to taste.

Makes 8 1-cup servings and freezes well.

Per serving: 230 calories; 26 grams protein; 24 grams carbohydrates; 0 grams sugar; 4 grams fat (2 grams saturated); 30 mg cholesterol; 8 grams fiber; 230 mg sodium.


This is a quick and easy meal to make and freeze. Even my 15 and 8 year old kids love it, in fact my 8 year old son requested this for dinner tonight, so I figured I would share...ENJOY!!
