Roasted Brussel sprouts

1 tbsp butter 3/4 cups per serving 115 cals
1 pound Brussels sprouts trimmed and quartered
1/4 c chopped hazelnuts
1/4 tsp salt
pepper to taste
3 tbsp. water


position rack in bottom third of oven 450 degrees place butter on large rimmed baking sheet and roast till butter is melted browned and fragrant 4-5 mins remove baking sheet toss Brussels and hazelnuts with browned butter and sprinkle with salt n pepper return to oven and roast for 7 mins sprinkle with water toss and continue roasting until sprouts are tender and lightly browned 7-9 mins more

  • Oh I love roasted sprouts.
    They're also delicious sliced (well as much as you can) and fried with bacon. Mmm!

    My wife never tried a Brussels sprout until I grilled them on the Weber. I cut them in half and use a Misto sprayer with extra virgin olive oil and salt and pepper to taste. Now she loves them I basically am using one table spoon of fat instead of the butter.

    I will have to try the Hazel nuts though.

    Brussel sprouts are so yummy when they are roasted and nutty! I haven't roasted them with butter (mainly olive oil, since it doesn't burn as easily), but I'd try it.

    Will try em with hazelnuts.

    I've been roasting them with a little lemon juice and olive oil, then tossing them in plain breadcrumbs, a bit of lemon zest and shredded parm while they're stll hot. UNREAL!

    I had never had a Brussels Sprout until last year!

    You can also add chestnuts as well. It's my standard brussel sprouts Thankgiving/Christmas dish.

    My standard prep is to fry a slice or two of bacon until crisp, remove and chop, then add 2-3 cloves garlic and halved sprouts (with the loose leaves) to the rendered fat and let them sit until they get crispy on the one side, flip, cook for another minute and then toss with the bacon, lemon juice and parmesan. You almost forget you're eating veggies.

    I've made these before and they were really good. Just the right cook of heat and sweetness.

    Directions for those that don't wanna click.

    Toss 1 1/2 pounds halved Brussels sprouts with 1/4 cup olive oil and a pinch each of red pepper flakes, salt and pepper. Roast cut-side down on a baking sheet at 450 until caramelized, 25 to 30 minutes. Drizzle with white wine vinegar and honey.
