Chicken Burgers
Options
1 lb ground chicken meat 325 cal 4 servings
2 scallions chopped
1 small zucchini shredded
1 med carrot shredded
1 tbsp chili powder
1/4 tsp cumin
1/8 tsp cayenne pepper
3/4 tsp salt
1 can 16 oz vegetarian baked beans
1 tbsp. mustard
1 tbsp light molasses
lettuce leaves sliced tomato and mustard
In medium bowl combine ground chicken scallions zucchini carrot chili powder cumin red pepper and 3/4 tsp salt just until blended but not over mixed shape mixture into four 3 1/2 inch round patties set aside In saucepan over medium heat heat beans mustard and molasses to boiling spray heavy 12 inch skillet with pam heat skillet over med heat until very hot but not smoking add patties to hot skillet and cook 5 mins turn patties and cook until no longer pink inside top bottom half of each roll with lettuce
then with a patty add tomato slice and dollop of mustard
