Here is a recipe for Banana Cake with a Cream Cheese frosting! It is soooo good and 1 serving is 1/8th of the whole cake for only 140 calories. YUM!!

    It is SO good, way better than I had hoped. It's calling my name from the fridge. The whole low cal thing is kind of a moot point if I eat the whole thing, right? LOL

    Ingredients

    Cake:
    2 cups Flour
    3 tsp Baking Powder
    ½ cup Splenda
    ¼ tsp Nutmeg
    ¼ tsp Allspice
    1 tsp Ground Cinnamon
    1 cup Simply Smart Milk
    ¼ cup Natural Apple Sauce
    4 large Bananas
    1 Whole Egg
    2 Large Egg Whites

    Frosting:
    ¾ cup Powdered Sugar
    15 tbsp Whipped Cream Cheese
    1 tsp Vanilla Extract



    Instructions:

    Pre-heat oven to 350°. Grease two round cake pans using PAM Baking Spray. Set aside.

    In a small bowl, mash the large Bananas until they are creamy and liquid-like. Set aside.

    Sift flour into a separate large bowl. Add Baking Powder, Splenda, and Spices, and stir until well combined. Add the mashed Bananas, Milk, Apple Sauce, Egg, and Egg Whites, and mix until just blended – do not over-mix as this will dry out the cake and make it denser and less fluffy.

    Pour the batter into the two prepared cake pans, dividing the batter equally between the two. Place the pans into the oven and bake for approximately 30-35 minutes, or until a toothpick inserted into the center of each cake comes out clean. Set aside and allow to cool completely before frosting. I put my cakes on cooling trays and placed the trays into the fridge to cool them down faster and to help the cakes retain moisture.

    While the cakes are baking, in a small bowl, combine the Powdered Sugar, Whipped Cream Cheese, and Vanilla Extract, and whisk until a creamy consistency is achieved and there are no lumps. Store this frosting in the fridge until you are ready to frost the cake with it.

    Once the cake is completely cooled, spread the Cream Cheese Frosting evenly across each of the two cakes, coating the top of each with a thin layer of frosting.

    Cut each cake into 8ths and serve chilled. Store leftovers in the refrigerator.


    **Side note - if you don't like frosting, then don't put it on! This will cut out almost 47 calories per slice. **
