What are your favorite vegan recipes? Mine are Banana Oat Pancakes! They are simply delicious with some melted peanut butter drizzled on top! Here is my go to recipe!
Ingredients
1 1/2 cups unsweetened almond milk (or non-dairy milk of your preference)
1 cup rolled oats
2 ripe bananas chopped
1/2 cup all purpose flour
1 Tsbp., plus 1 tsp. baking powder
1/2 tsp. kosher salt
1/2 tsp. cinnamon
pinch of nutmeg
Instructions:
In a blender, puree almond milk & oats until smooth. Add bananas, flour, salt, baking powder, cinnamon, & nutmeg & puree for a few seconds more. Allow the batter to rest for 10 minutes.
Heat a large non-stick pan or griddle over medium heat. Mist with non-stick cooking spray. Scoop batter onto pan in 1/4 cup increments. Reduce pan to medium-low & cook pancakes until air bubbles appear & the underside is golden brown, about 3 to 5 minutes. Flip & cook 3-5 minutes more.
Top with sliced bananas & maple syrup.
***Makes 10 small pancakes.

oh my gosh that sounds so good. i want to try it! i have been vegan for almost 11 months now, but have not made any complex recipes such as that. honestly, i like to just take a bunch of fruits, vegetables, grains, legumes, and sometimes oils and put them in different combinations. what's really good is taking half a baked acorn squash and mashing up some avocado in with the squash. it's actually REALLY yummy! i do enjoy making some creamy soups such as cauliflower, tomato, or butternut squash soup and adding some soy or almond milk or creamer to it. but i definitely want to try some more complex vegan recipes sometime.0

One of my favorites is mediterranean quinoa. Sorry I don't have amounts, I just add until it tastes good.
Quinoa
Sundried Tomatoes
Kalamata Olives
Cucumber
Green Onions
Red Bell Pepper
Olive Oil
Oregano
Thyme
Red Pepper Flakes
Nutritional Yeast
Salt & Black Pepper if needed depending on how much flavor the sundried tomatoes and olives have.0 -
