Base pancake and muffin recipe

I was wondering if anyone would have any decent pancake or muffin recipes?
I would prefer not to use butter or sugar if it's possible or any crazy ingredients.
I'm fine with using flour, milk, egg etc

My base pancake recipe is, one egg, one cup of self raising flour, one cup of milk. I use a measured cup, but I have seen Jamie Oliver us any cup. As long as the milk and flour are roughly the same amount. Low fat milk works as good as full cream when I've made them. Also they are pretty plain, so I sometimes mash banana or grate apple into the mix. Really whatever works for you.0

That's pretty much the exact recipe I used tonight.
Except I used wholemeal flour
I found the mixture really runny and the pancakes were flat
I can't seem to cook
