I have a package of boneless chicken thighs thawed out at home. Any recommendations on recipes?

    I ground up Fibre 1 cerial (as a bread crumb) and add some currey powder and bake it (on a cooling rack over a cookie sheet so it's not being fried in it's grease

  • Put them in the Crockpot with 1/2-3/4 C Salsa, 2 TBSP Chipotle in Adobo (chopped), and 1/2 tsp Chili Powder season with salt and pepper. When cooked shred the chicken with two forks. Makes great tacos, enchiladas, burritos etc...

    Orzo 1/2 cup = 100 calories
    EVOO 1 tbs = 120 calories
    Red Bell Pepper = approx 30 calories
    Green Bell Pepper = approx 30 calories
    Onion = approx 20 calories
    Chicken thigh = 120 calories per 4 ounces
    Greek Seasoning

    Season the chicken thighs with greek seasoning (or your favorite chicken seasonings) and bake in a 450 degree oven for about 25 minutes until done.

    Slice red and green peppers and onion into strips. Add 1 tbs EVOO to a pan and sautee the veggies until they are to your doneness (I like mine char'd as my husband likes his just mushy and the kids like them raw.)

    Boil Orzo until al dente. Drain. Add tbs EVOO and mix.

    Dice chicken. Mix with orzo and veggies.
