Potato-Bacon Soup - Yummy Low Calorie Soup!

Hey! I am stealing this from a weight watchers cook book but a friend asked me to post it! It is soooo good!!
Potato-Bacon Soup
2 slices bacon (uncooked), cut into 1/2 inch pieces
1 small chopped onion
4 cups frozen Southern-style has brown potatoes (such as Ore-Ida)
1 can (14-ounce) fat-free, less sodium chicken broth
1/4 tsp. salt
1/8 tsp. pepper
1 cup 1% low-fat milk
2 TBSP. chopped green onions
1/2 cup (2 ounces) reduced-fat shredded extra-sharp Cheddar cheese
1. Cook bacon in a large saucepan over medium heat 2 minutes, stirring frequently; add onion. Cook, stirring frequently, 5 minutes or until bacon is crisp.
2. Add potatoes to bacon mixture, stirring to coat with bacon drippings. Add broth, salt, and pepper, cover and bring to a boil over high heat for 6 minutes, stirring frequently.
Mash potatoes with a potato masher until soup is slightly thick. Stir in milk. Cook, stirring constantly, 1 minute or until thoroughly heated; remove from heat. Ladle soup into bowls; sprinkle evenly with green onions and cheese. Yield: 4 servings (1 cup).
Per serving: CALORIES: 225
PROTEIN: 11.9g
CARBOHYDRATES: 24.4g
CHOLESTEROL: 30mg.
IRON: 0.2mg
SODIUM: 812mg
CALCIUM: 235mg
And I already added it to the myfitnesspal site as Potato Bacon Soup!

Wow! This is a GREAT recipe! I was amazed at how good it really was!
To answer the question about fat - mine had only 6 grams....BUT, I made it with 2% milk instead of 1%. It's just what I had on-hand.....plus it was about to go bad. My hubby keeps forgetting that we're on SKIM MILK. LOL I'd like to try this recipe with skim and see what happens....

YUM potato bacon soup is my fave! glad to see al ighter version. Just wanted to add, watch out for the hash brown potatoes, they are often fried in oil before being frozen, check the ingredients!0
